Crepes!

Years ago The Daddy Monkey used to make crepes with chocolate sauce for me when I worked nights. I’ve been thinking of them a lot lately, and I decided to whip some up. I do not own any teflon anymore, so I needed the right pan.
I know it’s completely ridiculous to buy a special pan just for crepes, but this pan is something special. I bought it at one of those fancy cooking equipment stores for an unbelievable $20. Seasoning the pan gave it a surface slick enough to rival the best teflon.
I used the recipe from Julia and Jacques Cooking at Home by Julia Child and Jacques Pepin. I filled them with a quick ganache (chocolate melted with cream) and topped them with fresh raspberries and whipped cream.
There wasn’t time for a date-night dinner a few weeks ago, so I made these for dessert after the kids went to bed. Those (who shall remain nameless) who have freshly made warm crepes for dessert at 9:30 at night after the kids are in bed should not complain about their wife taking a few pictures first.

They look divine…..I love crepes. I just found that book at Goodwill so I will have to give the recipe a try. I think I may need the pan though.
